One of the world’s greatest chef’s is Daniel Humm.

Born in Switzerland, Chef Daniel began his culinary training at the young age of 14 by cooking at several Swiss hotels and restaurants—earning his first Michelin star at the age of 24 as executive chef at boutique inn Gathaus zum Gupf in the Appenzell Mountains of the Swiss Alps. In 2003, Daniel became executive chef of the upscale Campton Place in San Francisco, receiving a four-star review from Michael Bauer of the San Francisco Chronicle. Campton Place is where I was fortunate to have sampled Daniel’s cuisine and became a fan. In 2007, Will Guidara convinced Humm to move to New York and become the executive chef of famed Eleven Madison Park—where in three years was named Grand Chef Relais & Châtaux . . . followed by four stars from Frank Bruni of The New York Times, five James Beard Awards (including Best Chef: New York City) and three Michelin Stars.

Chef Daniel Humm’s latest project is TheNomad Hotel with Restaurateur Will Guidara, which is owned and operated by the Sydell Group (of Ace NY
and Palm Springs fame). Perfectly located on Broadway at 28th—bordered by the Flatiron District, Gramercy Park, Chelsea and Midtown Manhattan—NoMad (north of Madison) is a turn-of-the-century Beaux-Arts building that has been fully restored to it original grandeur. French designer Jacques Garcia installed a fresh take on the classic grand hotels of Europe . . . with a nod to the Parisian flat of his youth. Rooms are residential in feel and decorated with richly textured custom furnishings, original artwork and a New York sensibility.

Soaring ceilings are visible throughout the public spaces. The Atrium provides natural light through the pyramidal glass roof to the dining tables below and is inspired by the great courtyards of Europe.

The Dining Room displays an open hearth, where guests may observe the preparations of fresh breads and seasonal specialties. NoMad Restaurant is comprised of a series of rooms surrounding the atrium and features a refined yet approachable food and beverage program. The cuisine is casually elegant and spectacular.

When I dined there, The Bar was packed with a spirited energy, but it was clear that the stylish crowd was appreciative of the superb plates, the wide choice of wine varietals and the handcrafted cocktails. NoMad is one of the hottest tickets in town.

The Library is bi-level with an original spiral staircase, imported from the South of France, complete with mezzanine catwalk. The library morphs from daytime lounging with coffee, to afternoon tea with finger sandwiches, to elegant cocktail destination.

In warm weather months, The Rooftop showcases a bar and restaurant featuring a five-course tasting menuhighlighting local ingredients of the summer season. Only same-day reservations are accepted after 11:00 a.m. with the tariff requested in advance. This highly coveted and breathtaking style of dining on Chef Daniel Humm’s cuisine should be added to any foodie’s list of ‘to-dos’ in Manhattan.
